Ceramic knives stay sharp longer than stainless steel knives because they are much harder. Nevertheless, a ceramic blade becomes dull after a long time and it is time to sharpen the ceramic knife.

How to grind ceramic knives?

Ceramic knives are today in many different qualities in the market.

Ceramic knives are much harder than steel knives. Even Damascus or powder steel knives, ie materials known from high-priced Japanese knives, are sometimes outperformed by good ceramic knives in terms of hardness and cutting resistance.

Accordingly unsuitable are many abrasives for ceramic knives. Only diamond abrasives can be used to grind and sharpen ceramic knives.

1. whetstone

If you are experienced in using a whetstone, you can sharpen your ceramic knife with a diamond-coated grindstone. Such a diamond grindstone with a grain size of 400 and 1000 you get already for about 30 euros. A diamond grindstone with 1000 grit is already sufficient for occasional re-sharpening, if you have basic cuts (if small quirks in the blade, etc.) can be performed by a specialist.

2. Ceramic Knife Grinder

There are different grinders for ceramic knives. But be careful: be sure to read carefully, because often in the search of ceramics in connection with knife sharpener devices, which can sharpen steel knife by means of ceramic grinding wheels, but no ceramic knives. Specifically, look under sharpening ceramic knives (eg Amazon) or diamond grinders for ceramic knives. Then there are devices for manual grinding as well as battery or electric knife sharpeners especially for ceramic knives.

3. Diamond grinding wheel for grinding block

If you have a grinding block, you can also buy correspondingly fine diamond grinding wheels and sharpen your ceramic knives. However, you should be very careful. Even if ceramic knives are absolutely resistant to heat, a wet grinder can be used better simply because of the ceramic dust (wearing a surgical mask). If you already have a knife sharpening attachment, you will be able to keep the desired angle very well.

Tip: If you have never sharpened knives, you should not immediately sharpen ceramic knives. Youtube shows some beginners' manuals on knife sharpening - so start with a simple metal blade as a practice object. Such is usually much more flexible and thanks to the softer material also easier to work with. If you find it easy to sharpen metal blades, try a cheap discount ceramic knife. Do not bend the blade under pressure and keep the angle (see instructions). Only when all this succeeds reliably, you can go to the more expensive and therefore a bit harder ceramic knife.

You should not cut with a ceramic knife on hard documents, otherwise it is dull again quickly.

What you need:

  • non-slip pad
  • Diamond whetstone
  • water
  • Cloth / cloths
  1. Place the diamond grindstone with the coarser side on the non-slip surface, if you only want to regrind.
  2. If a coarser cut is required (eg for small notches), lay the finer side down.
  3. Wet the whetstone on top.
  4. Holding the knife horizontally with one hand on the handle, the sharp side of the blade facing away from you.
  5. The Finder of the other hand lay side by side on the blade side, the thumb on the back of the knife.
  6. Start with the blade tip.
  7. Hold the blade at a constant angle of 10 to 15 degrees to the grindstone.
  8. Never bend the blade. Only practice very subtle pressure.
  9. Always guide the front part blade in crescent-shaped movements over the grindstone towards the tip of the knife.
  10. Count the number of your moves and make the same number on the opposite side of the blade.
  11. Continue grinding the remainder of the blade in the same way, but at an angle of about 60 degrees.
  12. In between, wipe both the whetstone and the blade and wet the stone again.
  13. Check again and again if the blade has reached the desired sharpness - for example by trying to cut paper with it.
Take care when handling the ceramic knives. They are very spicy when freshly ground. Do not try to check the sharpness with a finger, as is sometimes the case with normal knives. Even tips to test the same on the fingernail can lead to injury.
