Ingredients for the Easter bunny cake

dough

  • 250 g of soft butter
  • 200 g of sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 4 drops of baking oil
  • 6 eggs
  • 400 g of flour
  • 4 level teaspoon baking powder
  • 3 tablespoons milk

filling

  • 1 packet of pudding powder
  • 1/4 l of milk
  • 1 tablespoon of sugar
  • 250 g of soft butter
  • 100 g of sugar
  • 2 eggs
  • 2 tablespoons of dark cocoa powder
  • 370 g drained, pitted sour cherries from the glass
  • 4 tablespoons sour cherry juice
  • 2 tablespoons cornstarch

  • 20 g of grated coconut
  • 50 g whole milk couverture
  • Marzipan raw or candied fruits for decoration

preparation

First you beat the butter, the sugar, vanilla sugar, salt and baking oil frothy. Then the eggs are stirred one after the other and everything is mixed until the sugar has completely dissolved. The flour and the baking powder are also added and mix everything thoroughly. Finally, the milk is added and lifted. The dough is then finally placed on a baking sheet lined with baking paper, smoothed it and allowed to bake the cake in a preheated oven at 175° C.

Now it's up to the filling: Bring 1/8 l of milk to the boil, stir the custard powder and the sugar with the remaining cold milk, add it to the warm one and let it boil again. Then let the pudding cool down. The juice of the sour cherries is poured off and stirred with 4 tablespoons of the juice with the cornstarch. The sour cherries and the starch-juice mixture are also allowed to boil in a saucepan and then allowed to cool. Beat the butter and sugar until frothy, stirring in the eggs and pudding. This is mixed until a creamy mass is formed and finally the cocoa is added.

From the finished cake you cut out the shape of a rabbit and divide this into two floors. On the top of the first soil, the sour cherry pudding mixture is distributed and set the second floor on it. This is now coated with the butter cream and decorated with grated coconut, whole milk couverture, marzipan raw material or fruits.
