Meat Fondue - Recipes for the New Year's Eve fondue: meat


500 g beef fillet, 600 g vegetables (for example Chinese cabbage, peppers, celery, cauliflower, zucchini, broccoli, fennel, carrots), 300 g tofu (firm), 2 spring onions, 1 tbsp soy sauce, 2 l chicken stock

Preparation of meat and vegetable fondue:
Cut the fillet of beef into thin slices. Roll these gently and arrange on a plate. Cut the vegetables into pieces. Pre-heat the celery, cauliflower, fennel and carrots for 7 minutes. Dice and arrange the tofu. Cut the spring onions into thin rings and add. Season with the soy sauce. Pour the broth into a fondue pot and place on a rechaud. Each diner dips meat, vegetables or tofu with fondue forks or small sieves in the boiling broth: heat the tofu cubes for 1 to 2 minutes, the vegetables require 1 to 3 minutes of cooking time and the thinly cut meat must be only briefly drawn.

Cold curry sauce

Ingredients:

½ small onion, ¼ chopped apple, ½ tsp butter, ½ tbsp mango chutney, 125g sour cream, 1 tsp curry powder (madras), 1 tbsp kikkoman soy sauce, pinch of sambal oelek Preparation: Peel the apple, finely grate and dice with the onion cubes Braise butter briefly. The mango chutney happen. Mix the sour cream with the curry powder, the soy sauce, the cooled onion-apple mixture, the mango chutney and the sambal oelek.

Cold mustard sauce

Ingredients:

1 hard-boiled egg, 2 tbsp spicy mustard, 1 teaspoon cooking oil, 150 g quark, 2 tsp Kikkoman soy sauce, 1 tsp lemon juice, 2 tbsp chopped chives

Preparation:

Remove the egg yolk and squeeze through a fine sieve. Add the mustard and the oil (drop by drop). Mix with the quark and season with the soy sauce and the lemon juice. Chop the egg whites and mix with the chives.

Spicy tomato sauce

Ingredients:

1 small chopped onion (about 50 g), 1 tablespoon cooking oil, 250 g peeled tomatoes (possibly from the tin), 1 red pepper, 1 small piece of red pepper, 1 clove garlic, ½ tablespoon wine vinegar, 2 tablespoons Kikkoman soy sauce

Preparation:

Stew the onion in oil. Cut and add the tomatoes and the pitted paprika. Chop the pepper and cut the garlic clove into slices. Add both. Cook gently with the vinegar and then puree in a blender. Season the sauce with the soy sauce after cooling down.
